Chicken meatball curry

RECIPE (4 servings)

INGREDIENTS - MEATBALLS

  • Chicken mince, 400g

  • Egg, 1

  • Coriander, 1 handfull

  • Chiliflakes

  • Salt & pepper

INGREDIENTS - CURRY SAUCE

  • Yellow onion, 1

  • Garlic, 2 cloves

  • Ginger, 1 handful

  • Broccoli, 1 head

  • Coconut milk,

  • Soy sauce, a dash

  • Lemon, a dash

  • Chicken stock, 1 cube

  • Turmeric powder, ~1 tbs

  • Curry powder, ~2 tbs

  • Salt & pepper

HOW TO

  1. Preheat oven to 180 degrees C

  2. Blend together all meatball ingredients, let soak for 5 min

  3. Chop onion, garlic, ginger (small cubes) and broccoli (bigger bites)

  4. Shape the meatball mixture to meatballs (I made 8 bigger ones)

  5. Fry on high temperature until golden brown, and bake in oven until cooked throughly ~10 min

  6. Make the sauce!

  7. Fry onion and garlic

  8. Add coconut milk and all seasoning, let simmer for 5 min

  9. Add the broccoli and meatballs, let simmer for ~3 more minutes. Done!
