Chicken meatball curry
RECIPE (4 servings)
INGREDIENTS - MEATBALLS
Chicken mince, 400g
Egg, 1
Coriander, 1 handfull
Chiliflakes
Salt & pepper
INGREDIENTS - CURRY SAUCE
Yellow onion, 1
Garlic, 2 cloves
Ginger, 1 handful
Broccoli, 1 head
Coconut milk,
Soy sauce, a dash
Lemon, a dash
Chicken stock, 1 cube
Turmeric powder, ~1 tbs
Curry powder, ~2 tbs
Salt & pepper
HOW TO
Preheat oven to 180 degrees C
Blend together all meatball ingredients, let soak for 5 min
Chop onion, garlic, ginger (small cubes) and broccoli (bigger bites)
Shape the meatball mixture to meatballs (I made 8 bigger ones)
Fry on high temperature until golden brown, and bake in oven until cooked throughly ~10 min
Make the sauce!
Fry onion and garlic
Add coconut milk and all seasoning, let simmer for 5 min
Add the broccoli and meatballs, let simmer for ~3 more minutes. Done!
